Our Pam and Alan are now at their first campsite, on the first day of their new fulltime life on the road adventure to make some memories. They are camped with Chloe, our famous follower of canine fashion, in Bendigo at Central City Caravan Park.
They have completed the move from a 3BR house to a 21ft caravan, plus dog. Alan says: GoSee woke up to a cold and foggy three degree morning in Bendigo at Central City Caravan Park and now at 10am its seven degrees it doesnt look like getting much better.
Bendigo will be our home for a few weeks.
Back at work and on deck after a hectic final six day rush to get away it took a while to find where I had put the computer after only using my phone for last six days but all is intact and operating as normal.
Pam is noted for her cooking and she is a fan of the 4 Ingredients recipes. Here is an easy to make Fruit Cake which the GoSee crew enjoy.

COFFEE CHOCOLATE FRUIT CAKE.
From 4 Ingredients Menu Planning
Coffee makes it possible to get out of bed, but chocolate makes it worthwhile ... Its that combination that makes this cake SOOOOO GOOD.
* 2 tablespoons (16g) instant coffee (or 2 cups freshly brewed coffee).
* 1 kg (2 pounds) mixed dried fruit.
* 150/5.2oz fruit and nut chocolate, roughly chopped.
* 2 cups (350g) self-raising flour (gluten free if required).
Make 2 cups (500ml) of coffee by stirring the instant coffee into boiling water. Into a large bowl, add the dried fruit, pour over the coffee and soak overnight. Preheat the oven to 125 C/250F.
Line a 22cm/9inch cake tin with baking paper. Mix the chocolate into the fruit and add the flour. Stir until well combined. Spoon the thick batter into the cake tin and place in the bottom third of your oven. Bake for 21/2 hours or until cooked through.
The ultimate trick to a flavourful, moist fruit cake is to bake long and low ... A long time, on low heat and everyone will think you have been bakin like the CWA women for years!
